As we get older we try to start eating more healthy. Eating more fruits, and vegetables. When your young most don’t think about eating healthy. I know I didn’t, I could eat whatever I wanted and never gained a pound.
Now I would eat some fruits, and veggies. But I would eat more junk food, and snacks, not much sweets or soda, but chips.
Now that I’m older and I can’t eat whatever I want anymore, because it goes straight to my midsection )-: I have started looking for more heathy snacks, and ways to get more veggies in my diet.
One of my downfalls is chips, I love chips. I tried cutting them out completely, but I crave chips.
Veggie chips would be a healthy alternative, would help get more veggies in my diet and hopefully curb my chip craving by giving me a crisp veggie chip.
So today I am going to experiment with green beans. I going to make “Spicy Baked Parmesan Green Beans”.
I only had a frozen (14oz. bag) green beans. So I emptied them in my colander to thaw.
Once thawed I dried them, then poured into a large bowl. I then added:
1 1/2 teaspoons of virgin olive oil
And mixed gently to coat.
Then add:
1/2 teaspoon of garlic powder
1/4 teaspoon of kosher salt
1/8 teaspoon of cayenne pepper
1/8 teaspoon of pepper
1/4 cup Parmesan cheese
Mix it gently to coat all the beans. Once mixed place beans onto foil covered cookie sheet, and bake at 425 for 25 minutes.
They tasted really yummy, but they didn’t get real crispy like I wanted. I will try them again but with fresh green beans. I know that they do get crisp because a co-worker brought some to work before.
