This is a easy recipe that I came up with years ago for a single serving of beef and potatoes that are wrapped in foil individually and baked.
1 lb. Ground beef
4 Red potatoes chopped
2 Carrots chopped
1/2 Onion chopped
1 Can of Golden mushroom soup
Salt & pepper to taste
Aluminum foil
I leave the skins on my potatoes, but just wash real good before chopping.
Place your ground beef patty in the center of a piece of foil. You can form your own patties or use ready made. I normally make my own patties, but I had some ready made left over from a cookout that I used here.
Add your potatoes, carrots, and onions to the top of your beef patty.
Now add a couple spoonfuls of mushroom soup on top.
Add some salt and pepper to taste.
Wrap in foil and bake at 400 degrees for about 45 minutes. Makes 4 single servings.
These are great to make several up in advance to take for lunches. Just unwrap and pour into a microwaveable dish and your good to go.
