Chicken & Wild Rice Soup
Do you love soup? Are you one of those people like myself that can eat soup anytime of the year? I don’t care whether it’s hot or cold, I just love soup. So when I find an easy soup recipe I’m in hog heaven.
I came up with this recipe of chicken & wild rice soup by using a box of Uncle Ben’s Chicken & Wild Rice.
Ingredients Needed
1 Box of Uncle Ben Chicken & Wild Rice
1 teaspoon of basil
1 teaspoon of parsley
½ teaspoon of garlic powder
1 chicken bouillon cube
1 13oz. can chicken breast chunks
1 cup mixed vegetables
1 small can of mushrooms (optional)
Salt & pepper to taste
To make this Chicken & Wild Rice Soup bring 5-6 cups of water to boil, add box of uncle Ben chicken & rice mix, basil, parsley, garlic powder, can chicken, veggies, and mushrooms. May need to add more water as it cooks, depending on how soupy you like it.
Return to a boil, then turn down the heat and simmer for approximately 45-60 minutes, till rice is tender.
Be careful when adding the salt because the box of Uncle Ben and bouillon cube are naturally salty. You may want to wait till the end to add the salt.
Hubby and I ate on this soup for several days.
