Today would be a great day to have a bowl of potato soup. Yesterday it was in the 80's, today it's in the low 60's, and really windy, so it feels colder.
This is a easy potato soup recipe, and really yummy!
8 Red Potatoes
6 Green Onions Chopped
8-10 Strips of Cooked Bacon Chopped
1 Teaspoon Basil
1 Teaspoon Parsley
1 Tablespoon Chicken Bouillon
1/4 Teaspoon Garlic powder
2 1/2 Cups Milk
Black Pepper & Salt to taste
Cheese optional
Cut up potatoes, place in large pot, cover with water, and bring to a boil.
Add milk, bouillon, parsley, basil, garlic, onion, bacon, salt & pepper.
Return to boil. Reduces heat, low to medium high. Stir occasionally. Cook till potatoes are done and liquids thicken. About 40 minutes.
If you would like broth thicker just add 1 tablespoon of corn starch to 1/4 cup of cooled broth, mix, then pour in pot slowly while stirring till it thickens.
Dish soup up, add cheese and enjoy!
