This is a great recipe for getting a healthy dose of veggies. Takes a little bit of prep time chopping up the veggies, and putting them on the wood skewers. But well worth it!
I made enough for two of us to eat on, for 4 days, then I placed them in large ziplock bags until I was ready to cook. This saved me time during the week, but we were still able to eat healthy.
Ingredients Needed
3 zucchini
3 squash
1 large onion
Cherry or grape tomatoes
Olive oil
Garlic powder
Pastry brush
Wood skewers
Cookie sheet
First chop your vegetables into 1/4" -1/2" slices then put on skewers. If you don't want to cook them all now, then put some in ziplock bag for a quick veggie kabob during the week.
Using pastry brush add a little olive oil down the edges of the kabobs.
Sprinkle your garlic powder or seasoning of your choice.
Bake at 400 degrees for 20 minutes.
Slide off skewers and enjoy! Next time I think I will add mushrooms.
