Here's a easy breakfast sandwich that you can make up several in advance and throw in the freeze. Then pull out and pop in the microwave when you need something in a hurry.
I normally make these with flat bread, but store was out of flat bread so I decided to make them with ciabatta bread.
Eggs (one egg per sandwich)
Bacon cooked (1 1/2 slices per sandwich)
Pepper Jack cheese
Mix eggs together, then cook in large pan. Once done slice into bun size pieces, and place on bottom half of your ciabatta buns.
Add a slice of pepper jack cheese.
Place the top of your ciabatta bun on top. Wrap in paper towel, then in aluminum foil, place in freezer bag, and put in freeze for quick and easy on the go breakfast sandwiches.
