Homemade Cream of Broccoli Soup


I am a soup lover. I can eat soup anytime, winter or summer. Well lately my husband has been wanting cream of broccoli soup. I have never made homemade cream of broccoli soup before, so today I decided that I would try to make my own. I wanted to put some celery in the soup but I forgot to buy it while at the store, so instead of going back I used celery seed. I used butter to saute my onions, next time I think I will just use olive oil.

Ingredients
2 tablespoons of butter
1 large onion chopped
2 stalks of celery chopped or 1/4 teaspoon of celery seed
5 cups of water
4 tablespoons chicken bouillon
3 14oz. frozen bags of broccoli florets
16 oz. half and half or could use heavy cream
pepper to taste

To Thicken Soup
3 tablespoons of melted butter
2 tablespoons of flour

First I chopped up my onion and put them in a large pot to saute in butter. Then I took two of the frozen bags of broccoli and ran them through my food processor and chopped them up real fine. Once the onions were tender I added the water, chicken bouillon, celery seed, pepper and the finely chopped broccoli. While that was heating up I microwaved the other bag of broccoli just enough to make it easy to chop up into bite size pieces, I added that to the pot. I brought that to a boil then turned down the heat and let it simmer for about 15 minutes. Then I added the half and half, while waiting for that to start boiling again, I melted 3 tablespoons of butter and stirred in 2 tablespoons of flour to help thicken up the soup. Once soup was boiling again I then turned heat down to medium to low heat and stirred the butter and flour mixture into the soup and let it simmer till it thicken up like I wanted. It thicken up some after it sat for a little bit too.

I must say it turned out yummy. I will definitely be making this again, hopefully I will remember the celery. Next time I will use olive oil to saute in and maybe even try cornstarch to thicken instead of the butter and flour mixture.
