Quick and Easy Minestrone Soup Made in the Microwave

I love soup, and can eat it anytime of the year. This easy minestrone soup recipe that I am going to share with you today is not only delicious, but quick and easy to make.

Easy Minestrone Soup

This is a healthy, and delicious minestrone soup recipe that is made in the microwave. Of course leaving the few strips of bacon would make it a more healthy version. But since I very seldom eat bacon, I think this little bit would be ok.

Ingredients Needed

3 slices of bacon chopped
1/2 cup onion chopped
1/2 teaspoon minced garlic
1/2 cup sliced carrots
1/4 cup chopped celery
3 cups water
1 cup meatless marinara sauce
1 can 10.5 oz red kidney beans, rinsed
1/4 cup small shell macaroni
2 Tablespoons beef bouillon
1/4 teaspoon pepper
1/2 cup zucchini chopped
Salt to taste

Microwavable Minestrone Soup

Place chopped bacon in large microwaveable pot. Microwave on high 2-2 1/2 minutes until crisp. Blot up excess oil with paper towel.

Stir in garlic and onions. Cover and cook on high 1 1/2-2 minutes until onions are translucent.

Stir in carrots, celery, and 1 tablespoon of water. Cover and cook on high 2-3 minutes, stirring once.

Stir in the marinara sauce, beans, macaroni shells, pepper, and salt. Cover and cook on high 10 minutes, stirring once.

Add zucchini, cover and cook 5-8 minutes longer, until veggies and macaroni are tender.

That’s all there is to making this easy minestrone soup. Can’t get any easier than that for a delicious bowl of soup.

Makes 6 cups @ 120 calories per cup.
