Easy Summer Cucumber Salad

I am a little late on posting this recipe, since this is more of a summer recipe. But I am going to post it anyway because all three of these fruit and veggies are very good for you, and would be a great addition to a healthy diet. Below are some of the reasons why you should add them to your daily diet.

Tomatoes
Tomatoes are actually a fruit not a vegetable. They are a good source of vitamin and minerals, A, C, K, folate, potassium, thiamin, niacin, vitamin B6, magnesium, phosphorus, and copper. Low in calories, and fat free.

Tomatoes are highly loaded with a vital anti-oxidant known as Lycopene, which has been shown to help protect prostate cancer, breast cancer, intestinal cancers, and other cancerous cell formation, and diseases. The lycopene in tomatoes makes the skin less sensitive to UV light damage.

Cucumbers
Cucumber is often referred to as a super food.

Cucumbers are a good source of B vitamins. Cucumbers are 95 percent water, therefore keeping the body hydrated while helping the body eliminate toxins. They have most of the vitamins that the body needs in a single day. Leave the skins on for an additional amount of vitamin C.

Cucumbers are known to contain three lignans; lariciresinol, pinoresinol, and secoisolariciresinol, which research connects with reducing several types of cancer, including breast cancer, ovarian cancer, uterine cancer, and prostate cancer.

Due to the low calorie, high water content and dietary fiber in cucumbers, they are ideal for someone who is looking to lose weight. The high water content and fiber are effective in ridding the body of toxins, and aiding in digestion.

Cucumbers contain a lot of potassium, magnesium, and which can help in reducing cholesterol and regulating blood pressure.
Cucumbers are also an excellent source of silica, which is known to help promote joint health. They are rich in vitamin A, B1, B6, C, D, Folate, Calcium, and Magnesium.

As you can see cucumbers are a very powerful food source that would be well worth adding to your daily diet.

Purple Onion
Purple onions are full of fiber and naturally low in calories, they contain both soluble and insoluble fibers. Soluble fibers help with the absorption of vitamins and minerals through the intestinal walls. Insoluble fiber helps clean your intestines out.

Purple onions contain vitamin C which boost the immune system, build collagen, and acts like an antioxidant and works along with flavonoids to diminish free radicals.

Purple onions are rich in flavonoids called anthocyanins, which are known to neutralize free radicals that destroy healthy cells and tissues. Flavonoids help to protect vital organs, and help lower the risk of cancer.

Ingredients
2 cucumbers
2-3 tomatoes
1/2 purple onion
1/2 cup Zesty Italian salad dressing

Chop your tomatoes, cucumber, and onions into bit size pieces.

Mix together in bowl and add Zesty Italian salad dressing. (I put mine in single serving bowls so we could just grab one to take in our lunches.)
