Homemade Spanish Rice Recipe

I love Tex Mex! But one thing I’ve always struggled with making, was Spanish rice. Well not anymore. I finally conquered the art of making yummy Homemade Spanish rice.

Easy Homemade Spanish Rice Recipe

This will make 8 (1 cup) servings, so if you want to make less, just adjust your water and rice according to directions on rice package.

We like lots of cumin, so if you don’t like strong taste of cumin add less. We like it spicy to, so if you want it more mild use regular Rotel, or you could even use a can of diced tomatoes.

Add your bouillon cubes to your hot water to dissolve. Set aside.

Heat oil in large skillet. Once hot add your dry rice.

Stir in cumin and minced garlic.

Cook about 3-5 minutes to lightly brown rice. (I know the cumin’s going to make it brown,

Now add your bouillon water, Rotel, onions, and mixed vegetables. Bring to a boil, reduce heat to low and simmer 20 minutes. Stirring couple times while cooking.

I keep a pot of hot water just in case rice absorbs all the water before done.

Once done fluff rice and serve.

Ingredient’s Needed For Homemade Spanish Rice

2 Tomato Bouillon Cubes
2 Chicken Bouillon Cubes
1 1/2 Teaspoon Cumin
1 Can Rotel Hot
1 Tablespoon of minced garlic
1/4 Finely Chopped Onion
1 Cup Mixed Veggies
2 Cups of Mahatma Long Grain Rice
4 Cups of Hot Water
1 Tablespoon of Vegetable Oil

    I would love to make my own Spanish rice! I’ve only ever had it in restaurants or bought that prepackaged stuff at the store. I was wondering if maybe I could substitute the chicken bouillon with vegetable for a vegetarian version? I know that would probably change the taste a little. But, I just want to make my own rice so badly!

      I’m sure you could substitute the chicken bouillon for vegetable and I bet it really wouldn’t make that much difference. I bet it would still be delicious! If you try it let me know how it turned out.

    I love spanish rice! And this looks so good. I could eat this for lunch topped with a bit of salsa and melted cheese. Oh, and guacamole! Perfect meal! I’m pinning this and will be making it soon. I never knew that there was a tomato bouillon cubes? Where have I been????

      That sounds good, and no you can’t forget the guacamole. I find the tomato bouillon cubes in a little yellow box on the mexican food isle.

    Yummy! I don’t get creative enough with rice. This sounds great although I’ve never heard of tomato bouillon. I’m sure I could substitute some tomato juice or something?

      I love good spanish rice, this is the husbands recipe and it is a good one. I’m sure you could use a little tomato juice or just leave the tomato bouillon out, don’t think leaving it out would really change the flavor much at all. It’s mostly to give it some color.
