My Favorite Cookie

Roly Poly cookies

This is the recipe for my favorite cookie the “Roly Poly”. It is Mmm good. Some may call this “Snickerdoodle”, But this one is better. I think the snickerdoodle must have butter or something it just doesn’t taste quite the same to me. Give them a try and tell me what you think.

2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon soda
1/8 teaspoon salt
1cup shortening (I just use vegetable oil)
1 1/2 cups sugar
2 eggs

Combine flour, cream of tartar, soda and salt. In mixing bowl, cream shortening and sugar. Add eggs. Beat well. Add flour mixture and blend well. Chill dough in refrigerator for 2 hours or till easy to form into 3/4″ balls.

Turn oven on 350 degree. Lightly grease cookie sheet.

In small bowl mix 2 tablespoons sugar and 2 tablespoons of cinnamon.

Roll dough into 3/4 inch balls then dip into sugar/cinnamon mixture. place on cookie sheet and bake 10 to 12 minutes.

Makes about 72 cookies. Mmmm they will disappear fast they are soooooo good.
