Homemade Chicken Tortilla Soup – Comfort Food

With the cooler weather coming on it’s time for my homemade chicken tortilla soup. Now I can eat soup anytime of the year, but the hubby only likes soup when it’s cold, or when he’s sick.

Homemade Chicken Tortilla Soup

Easy Homemade Chicken Tortilla Soup

So the other day I broke out my soup pot and made my yummy homemade chicken tortilla soup, and it was so good. It was gone in no time at all, with me eating most of it (-;

For my homemade tortilla soup you will need a big pot and the following ingredients.

  • 1 can 14.5oz. Diced Tomatoes
  • 4 teaspoons of chicken bouillon 
  • 1 diced bell pepper
  • 1/2 diced onion
  • 1/2 teaspoon garlic
  • 1/4 teaspoon salt
  • 1 teaspoon black pepper
  • 1/3 cup frozen corn
  • 4 cups water
  • 2 cooked and shredded chicken breast
  • 1/2 cup black beans
  • Shredded cheese
  • Tortilla chips
  • Avocado

Combine water and bouillon together in large pot, heat until bouillon dissolves. Then add the rest of the ingredients (except cheese, tortilla’s, and avocado) and bring to a boil, lower heat and simmer 30-40 minutes.

Once veggies are tender remove from heat.

Using ladle dip homemade chicken tortilla soup into bowls, add crumbled tortilla chips on top, then some shredded cheese, and top it over with avocado chunks.
